Located in the heart of historic downtown Murphys, Milliaire Winery uses traditional techniques to produce limited bottlings of wine from select Foothill vineyards, utilizing only the highest-quality grapes. Conservative cellaring practices and aging in small oak barrels develop fullness of flavor and bouquet. All the reds are fermented in open half-ton bins with a punched cap. Native yeast is used for the fermentation. The whites are all barrel fermented. The Chardonnay is maintained sur lees until bottling, with weekly stirring. The resulting wines capture the essence unique to each vineyard. Visit the tasting room and peruse the gift shop for specialty gourmet food items.
